Snails preserves of escargots Gros-Gris (Hélix aspersa maxima).
They are the base of the principal receipts to snails. Indeed, these snails are already cooked. It is important to underline the care taken to the preparation of the bottles. The cooked snails still swim in a bubble of carrot, garlic, celery, onion, wine salt and water.

Ingredients: flour of soya, emulsifier (lecithin of soya), vegetable fat, salt and spices.

One drains snails, one places from there one in the croquille which one lines with a butter with the choice (garlic, roquefort, goat). Five minutes in a preheated furnace with 200° and it is ready.
